Ingredients
  

  • 300 g Onions
  • 1 tbsp thyme leaves
  • 1 tbsp butter 1
  • 1 tbsp flour
  • 1 dl dry white wine
  • 8 dl vegetable stock
  • 2 bay leaves
  • salt & freshly ground pepper
  • for the toasted bread
  • 1 tbsp butter 2
  • 4 slices of baguette
  • 60 g cheese gruyere or cheddar

Instructions
 

  • Peel and halve the onions and cut them into thin strips.
  • Chop the thyme leaves finer if necessary.
  • Heat the first portion of butter (1) in a wide frying pan. Add the onions and thyme and sauté over medium heat, then over low heat for about 15 minutes, stirring regularly.
  • Put the flour in a small sieve and dust over the onions. Steam briefly while turning the onions. Then add the white wine and the stock. Tear the bay leaves along the edge and add. Bring the soup to the boil, then cover and cook quietly on a low heat for about 30 minutes.
  • Finally remove the bay leaves and season the soup with salt and pepper.
  • Preheat the oven to 250 degrees.
  • Heat the second portion of butter (2) in a coated frying pan. Toast the baguette slices in it until golden brown.
  • Pour the finished hot soup into 2 large soup bowls and place the slices of bread on top. Sprinkle with the Gruyère. Bake the soup cups immediately in the 250 degree oven on the middle groove until the cheese is melted and golden.
